Why this conversation
Have somebody licked means to have them beaten, with the outcome already settled. The past form "we thought we had them licked" almost always sets up the twist that the thought was wrong, so the sentence is a confession, not a boast. It is informal and a little old-fashioned, at home in sport and war stories, and it works for problems too: "I thought I had the bug licked."
